today i'm posting this red lentil soup for the no croutons required spicy soup blog event.

we got kind of hooked on this stuff when we were travelling in turkey. in its simplest incarnation, red lentil soup is red lentils boiled with water (2 C lentils to 6-8 C water makes a nice soup) about 20 minutes or until the lentils stop being crunchy and start to dissolve. serve it with lemon juice, salt and hot red pepper flakes (and a basket of fresh bread, if you want to do it like they do in turkey)

if you want to change it up a little, try some of the following:

make the soup with broth instead of water
start the soup with sauteed garlic or onions
add 1 T cumin powder and 1 t garlic powder
use cider vinegar instead of lemon
add raw chopped bell peppers or onion
reduce the water to 4 C and serve lentils over rice or vegetables

we eat this all the time, partly because it's so cheap and easy, but it's also pretty addictive.

  1. My mom makes a really good lentil soup but I've always assumed it was complicated. This post makes me think that it might not be and I should call her and ask her how she does it. :)

  7. I like the idea of being able to come home and eat this with some crusty bread and salad... It just looks like it would be good for body and soul.
