so, in case anyone has any leftover pumpkin from last week, i decided to post one of my favorite recipes ever, slightly adapted from an old cookbook my mom used to have. these pumpkin muffins/cupcakes with peanut butter frosting are sweet, moist, fluffy, and strangely addictive.

1 C cooked or canned pumpkin
1/2 C oil
1/2 C maple syrup or honey
1/2 C water
1 3/4 C flour
1 T cornstarch or egg replacer
1 t baking soda
1 t baking powder
1 t cinnamon
1/2 t salt
1/2 t nutmeg

1/2 C or so peanut butter
maple syrup or honey to taste
pinch of salt

mix wet ingredients, mix dry ingredients and combine. bake 20-25 minutes at 350, in a greased or papered muffin pan. sweeten and salt peanut butter to taste, then thin with a little oil or soy milk if it's hard to spread. frost when cool. makes about 12.
